Yay! Is your okra hiding?
For reference, here’s the recipe I was telling you about: Heat a few tablespoons oil in a big skillet. Meanwhile, cut the stems off a pint of okra and then slice them into little rounds. Pour a few tablespoons of milk over them and toss to coat. In a separate bowl mix about 1/2 cup cornmeal, 1/4 cup fresh grated parmesan, 1-2 teaspoons salt, and chili powder to taste. Toss this with the okra. Dump the whole mess into the skillet, smoosh it down with a big spatula, and let it fry for a few minutes till the cheese is starting to brown. Flip the okra in big spatulas-full, and fry till this side is also nice and brown. I find I flip back and forth a couple times till all the cheese is browned and the okra is pretty bright green.
I find cooking it this way doesn’t take away all the slime but somehow it’s so delicious I don’t mind. Let me know what you think! I’m also going to get Ali to write down his gumbo recipe soon, and I’ll post that on the farm blog.
